Moving beyond the operational facets, the character and flavour profile of the Sumatra Pongo coffee, grown in the highlands, offers a sensory journey like no other. With a robust flavour profile interlaced with delicate fruity nuances and subtle traces of dark cocoa, this coffee variety has garnered acclaim, securing an average rating of 84 to 88 points by the Specialty Coffee Association (SCA).
Delving into Indonesia’s unique coffee landscape, a notable distinction emerges in the harvesting methods employed. Whether sourced from small-scale farmers or expansive plantations, all Arabica coffees in the region are meticulously handpicked. Notably, the production of “Kopi Luwak” stands out as an intriguing practice. In this method, civets consume ripe coffee cherries, leading to a distinctive transformation of the beans through digestion, culminating in a process where the beans are collected, washed, and dried post-excretion.
