China Lapsang Pai Mu Tan BIO is a rare meeting of delicacy and smoke. Harvested in spring in Fuding under controlled ecological cultivation, this light green Pai Mu Tan (White Peony) is carefully dried before beginning a slow transformation. Over the course of three weeks in the mountains of Wuyi – birthplace of Lapsang Souchong – it is gently refined with the smoke of pine and cypress wood.
Laid out in thick layers on bamboo mats, the leaves absorb the essence of the smoke without losing their natural grace. The result is a tea with whole leaves touched by golden-orange tips, yielding a honey-yellow liquor that is soft yet full of depth. On the palate, minerality and fruity notes balance with lingering wood smoke – a harmony of strength and subtlety.
Best prepared with 12 g per litre, steeped for around 2 minutes, this tea is an experience to savour slowly. Smoky, lingering, yet surprisingly gentle – a tea that carries both fire and finesse.
