Isle of Lewis Tea ™ – a smoky Earl Grey blend
We are very proud to present you with another one of our blends.
We came up with a blend that has a connection to the island and could also work as a palate cleanser. I used to be served in a local restaurant, that unfortunately no longer exists.
A tea with a difference
As a base, we picked Keemun tea, a black tea from China, from the province of Anhui, to be precise. This is the province where Sir James Matheson, who once owned the Isle of Lewis, imported the tea to Britain. As Keemun was fashionable then, the chances that a Keemun tea was served at the Lews Castle in Stornoway are pretty high. Another tea we offer is the Keemun, which we named the Castle Brew, which makes sense.
We added a bit of this and that to the Keemun to get a bit of peat or smoky taste, but not too much, just a hint, and rounded it up with an Earl Grey tea. You will smell the peat, fresh citrus, and Bergamot scent from the Earl Grey.
The Isle of Lewis Tea™ is mild, and the combination of different flavours is an absolute match in heaven.
Ingredients:
China black tea (Keemun), Lapsang Souchong, orange peels, flavour, cornflowers
Preparation:
1 tsp per cup, 4-5 per litre
100°C boiling hot water
steep for 3-5 minutes
